A sparkling wine first produced in the 16th Century France, known as the Méthode Ancestral. Petillant Naturel, or PetNat for short can be traced back to ancient winemaking techniques. The wine undergoes a single fermentation without the addition of yeast or sugars. The result is a sparkling wine with lively effervescence and refreshing flavors.

Vinification Notes:

Whole clusters (stems intact) of Nero d’Avola and Negroamaro foot tread for an overnight maceration on skins before pressing the following day. Co-fermented and aged in neutral tanks and neutral oak barrique for 6 months. Unfined. Filtered for stability.
